A Better Cookie Should Still Taste Like a Cookie

I've made a lot of cookies over the years—and I've also made my share of “healthier” cookies that weren't worth eating.

You probably know the kind.

umbly. Oddly sweet. Hard. Or made with a long list of substitute ingredients that somehow produces something that looks like a cookie but doesn't deliver the experience you were hoping for.

I don't think choosing better ingredients means we have to settle for a disappointing cookie.

A cookie should still taste like a cookie. And that's what I set out to achieve.

It Takes More Than Swapping the Sugar

Traditional cookie recipes rely heavily on sugar and flour for much more than sweetness and structure. They affect spread, browning, moisture, texture and that wonderful balance between a crisp edge and a tender or chewy center.

Change those ingredients and you change the chemistry of the cookie.

That's why simply taking a conventional recipe and replacing the sugar cup-for-cup or exchanging the flour doesn't always work.

The ingredients have to work together.

That's the thinking behind Cookie Magic.

I developed these recipes to create cookies that satisfy my standards for both ingredients and the finished result. Because if I'm going to have a cookie, I want it to be a good one.

There's Room for a Cookie

Eating well doesn't require turning every pleasurable food into something forbidden.

What matters is what we do consistently.

A nourishing everyday diet and an occasional homemade treat aren't contradictory. And when I make that treat myself, I get to decide exactly what goes into it.

That's one of the reasons I love baking from scratch.

No mystery ingredients. No unnecessary additives. No enormous bakery-sized portion unless that's what you intentionally choose to make.

Just a really good homemade cookie made with ingredients you've chosen.

Cookie Magic

Cookie Magic brings together my tested recipes, techniques and ingredient combinations so you don't have to spend your time experimenting with batch after batch trying to figure out what works.

You'll find cookies with the textures and flavors we actually want from a cookie—along with the methods that make the difference.

Whether you're already comfortable baking with alternative ingredients or you're just getting started, Cookie Magic takes much of the guesswork out of the process.

Because better ingredients shouldn't mean lowering your expectations.

Make the cookie worth eating.
